Avocado salad with cotija dressing

This is an antioxidant-rich rainbow salad provides 50 percent of your recommended fibre for the day supports healthy digestion and will keep you feeling full and energized.

INGREDIENTS:
Juice of one lime
1 tsp garlic, minced
1 pinch cayenne
¼ cup yellow bell pepper, diced
¼ cup baby tomatoes, sliced
3 radishes, diced
1 avocado, halved and seeded
1 tbsp cotija cheese
1 tbsp cilantro, chopped
1 tbsp scallion, chopped

DIRECTIONS:
1. Combine lime juice, cayenne, and garlic in a small bowl. Add yellow bell pepper, tomatoes, and radishes to the bowl, and mix well.

2. Cut the avocado into a small pieces, and scoop out extra flesh if necessary. Garnish with crumbled cotija cheese, scallions, cilantro, and keripik tempe (tempeh cracker).
